Happy Ending Cupcakes



I had a TON of requests on my weight loss blog for these after I made them for a party and posted about them. These are NOT healthy for you.....lol, but if you make them mini like I did here you can portion control them. They are little 2 bite desserts. I also make them in a full size version for cheat days.

I didn't take more pictures as I wasn't planning on posting this recipe. This is what my bloggers asked for though so here it is. Next time I make them though I will post more pics!!!

Filling:


  • 1 8-oz package cream cheese
  • 1/3 cup sugar
  • 1 egg
  • 1/8 tsp. salt
  • 1 cup semisweet chocolate chips


Cupcakes:


  • 1 package (2-layer size) chocolate cake mix (I like Duncan Hines Chocolate Fudge) - or your own favorite homemade chocolate cake recipe.
  • Egg (per cake mix)
  • Milk (per cake mix)
  • Oil (per cake mix)


Directions:

In a large bowl mix batter according to package directions. Usually this consists of 1 egg, 1 1/4 cup milk, & 3/4 cup oil.

Fill paper baking cups in muffin pans 2/3 full.

In another bowl cream the cheese with sugar, beat in egg and salt. Stir in chocolate pieces.

Drop 1 rounded teaspoon (smaller amount for mini cupcakes) of cheese mixture into each cupcake.


Bake according to cake package directions. Usually 350 degrees, but various times if your making mini cupcakes (13 minutes) or full size cupcakes (18-24 minutes)
