Thinly slice 1/2 medium onion and scatter in the bottom of the slow cooker. Top with whole 1lb pork tenderloin.
In a bowl, whisk:
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 1/4 cup tomato paste
- 1 1/2 tsp. Worcestershire sauce
- 2 tsp. mustard
- 2 cloves minced garlic
- 3/4 tsp. salt
- 3/4 tsp. pepper
- 1/3 cup water
Pour over pork. Cover; cook on low for 8 hours.
Shred meat by using two forks.
Tip:
You can use the meat on whole wheat buns or low carb tortillas. They are great with a cold slice of tomato, or cut up peppers, even roasted peppers are great!
